Today’s Recipe – Baked Stuffed Potatoes

Cut three large potatoes in halves and with a small spoon, carefully scoop out the potato flesh, leaving six potato shells with a bit of flesh and skin.Baked Stuffed Potatoes

Squeeze with your hands the potato flesh that you have scooped out. You should see a real lot of water come out.

Place the flesh in a bowl and add some chopped walnuts, a clove of garlic, one very ripe banana, some parley, 1/2 grated turnip, 4 cherry tomatoes cut in halves, sea salt, pepper, one chili, some diced tofu, and some bread crumbs. Mix well.

Fill the potato shells with this mixture and place in a well-greased tray, with olive oil and a bit of water. Cover with foil and let cook for 20 minutes.

Uncover, taking away the foil, and let it cook for a further ten minutes without foil, till its brown on top.

Serve with rocket salad (olive oil and balsamic vinegar).
