Cut a nice and big aubergine (eggplant) long-side, with a sharp knife, about 1/3 of an inch thickness, paying attention not to cut yourself. You will get about 8 or 9 stakes. Place them flat on a dish and sprinkle some salt on both side, just enough to sprinkle evenly all over the side of the piece. Cover them and let them sit for a while. The salt will let all of the bitter juices out of the Aubergine slices.
Gently squeeze the excess juice without breaking the pieces. Prepare a banana smoothie with just banana and soy milk. This will be used to coat the aubergine slices. So just dip each piece in the banana smoothie and gently shake excess liquid. Coat with fresh breadcrumbs mixed with cashew powder, salt, and chopped parsley cut very fine. Heat some olive oil or any good quality oil (please do not use cheap oil as this can be unhealthy). Gently fry the pieces till golden brown.
Place four tomatoes in water that has just come to the boil and leave them in there for two minutes. Get the tomatoes out and peal them. The skin should come off easily now. Cut the tomatoes, each in half, and discard all the seeds, leaving just the tomato flesh. Cut the flesh in very small, square pieces. Cut some celery also in small square pieces, and add some garlic and parsley chopped up, and small basil leaves. Dress with olive oil, lime, salt and pepper, and serve.
